HIGH-FIBER ONE-MINUTE FLAX MUFFIN/PANCAKES
1 Egg land's Best Large Grade A Egg
1/2 tsp. Baking Powder
1-1/2 tsp. Liquid Coconut Oil (or warm solid-cheaper)
1-1/2 tsp. Cinnamon
1-1/2 tsp. Banana Extract (optional, but tasty)
1-1/2 tsp. Pure Vanilla Extract
1-oz. *Pecan Halves (about 20 medium halves)
1/4 cup Red Mill Flaxseed Meal
Place all ingredients into large coffee mug or cup, adding the 1/4 cup milled flaxseed last. (If you have a mug with straight sides, it works best.)
Stir vigorously with fork until all ingredients are combined.
Microwave on High for 55-60 seconds (don’t be tempted to cook longer).
Slide a knife around the edges of the cup and remove muffin to plate or saucer.
BRILLIANT IDEA: Slice the muffin into about 5 slices and top each one with Butter. Then, cut the whole thing up, and slather with 1/4 cup (or more) of Walden Farms Calorie-Free Pancake Syrup (zero carbs!) I usually pop it back in the microwave for another 10-15 seconds to warm up the syrup.
NOTE: If you are eating this AS a “Muffin,” it is VERY filling, and you may need to start by eating just 1/2 of a muffin (share with someone you love!) It is good with LOTS of butter, or a carb-free cream cheese spread!
*If you don’t care for nuts, omitting them will reduce your per-serving stats to 249 Calories, Fat 19.61g, Fiber 9.9g, NET Carbs .85g and Protein 12.13. I LOVE nuts, though!!!
