After 5 months back to my bad habits, I've finally gotten back on track. I'm pleased, though - I only gained back 6 pounds in 5 months, so I didn't undo everything. I've now lost 7 pounds in about 2 1/2 weeks. This time around, I'm focused on getting healthy. The weight loss is a pleasant side effect instead of my primary goal. I started with a 4-day vegetable and fruit fast where I only juiced and ate produce with small amounts of olive oil and seasonings, then slowly began adding in different foods. I went a total of about 2 weeks completely vegan (except a slice of yummy cheesecake for our anniversary), and have now settled into a plan that seems to be working - and doesn't leave me feeling deprived.
I'm eating primarily vegetarian with very limited dairy and meat/poultry/fish
My plan: Breakfast-vegan Juice made with a mix of fruits and veggies, usually apple, carrot, celery, ginger, grapes, spinach Whole grain bagel or bread with natural peanut butter OR Homemade healthy muffin and some nuts Weekends will usually be scrambled eggs with lots of veggies and the juice and whole grain toast
Lunch-vegan Vegetable soup or a big salad with vinaigrette-type dressing or lemon and oil Fruit Nuts Whole grain crackers
Snacks-vegan Oatmeal and nuts V8 Fruit or Raw Veggies Fruit smoothie (almond milk, banana, misc other fruit) Another juice
Dinners 1 night per week - meat or poultry 2 nights per week - fish 4 nights per week - vegetarian (beans, pasta, dinner salad, stir fry, etc) Whole grain Vegetables Also a small amount of cheese with 2 or 3 dinners
Dessert Dark chocolate 1-2 times a week Fruit Healthy muffin or cookie (whole grain, homemade)
