I am craving the oddest thing. Peanut butter and lettuce sandwich! Who knew that when it was all our parents could afford to feed us that we would one day miss that? A poached egg has to be on toast otherwise there's no point.
I've made a good coconut pan bread but it's not the same. Bread is not the enemy but the contents are.
I actually left the house yesterday. A bad decision and ab epic failure. Home right now is the DR and the streets, traffic, noise and chaos are not compatible with two little dog's and an old woman who requires an assistive walking devise. I was a mess. Actually making it alive to the restaurant left me no nerve to care. I ordered a beer and I never drink beer. I ordered the won ton soup and I ordered beef with broccoli and sweet and sour pork. I did not order the rice but it came with a four person serving of it anyway.. The soup was amazing. The rest I brought back home for the most part.
Carb count was more than double but we made it home alive. In tears but alive. I honestly don't have the strength to battle life's little curves anymore. So after much consideration I will seek out that loaf of ready made high protein bread. I will have a poached egg on toast and I will relish my future peanut butter and lettuce sandwich (1 piece only). I'm guessing I'll be just fine.

Do what works for you. That is important. We are all very different. When I am on keto I very rarely make substitute foods. For me they are gateway drugs to the real thing. But I am lucky that I like all kind of foods so I can always find things to enjoy.
