Potato and veggie tacos.

Thanks. From time to time I try staying away from meat. I just run out of ideas. I’m a picky eater so it’s hard.

I’m not a huge meat eater but I never seem to get tired of thinly sliced top sirloin steak fajitas. I make my own taco and fajita seasonings without salt and use La Tortilla Factory Organic yellow or white corn tortillas. I toast them directly on the stove burner on a little wire gadget. No oil involved. Thinly sliced red, green and Anaheim chili’s and onion. Smattering of whatever Mexican cheese I have on hand and I either make my own salsa or I have a commercial brand that is really good and low in sodium. Oh yes, I always have nopales (cactus) with whatever Mexican food or salad I make. Refried beans occasionally —either home made or from the can once in a while. I guess if you are doing keto this wouldn’t work for you but I know what I am now going to have for dinner tomorrow. Oh yes, I Only make myself one taco with the shell.
